Strawberry Cream Cheese Cookies
Ingredients
4 T butter - room temperature
4 oz. cream cheese - room temperature
1/2 cup brown sugar (packed)
1/4 cup granulated sugar
1 egg
2 tsp. vanilla extract
1-1/4 c all-purpose flour
1 tsp. baking powder
1 cup fresh strawberries - chopped
Directions

Preheat oven to 350 degrees Fahrenheit.

In stand mixer, beat the cream cheese, butter and sugars until smooth and creamy.

Add egg and vanilla and mix until fully combined and creamy.

Add flour and baking soda and mix just until combined (don't over mix).

Chop strawberries into small chunks.

Fold the strawberries into the batter.

Cover a cookie pan with parchment paper.

Using a cookie scoop, scoop out approximately 2 Tbsp. per cookie (be sure to place the cookie dough 1 inch apart on the pan).

Bake for 13-15 minutes or until the bottom edges are just starting to brown.

Once finished baking, take out of the oven and immediately move to a wire rack.

Allow to cool completely.

Ice with cream cheese frosting (or frosting of your choice).
Notes
Cover the mixing bowl and place in the refrigerator between batches.
